Chicken Pasta

Chicken Pasta

Ingredients
  • 110g/4oz Glutafin Pasta Spirals cooked following pack instructions, rinse in boiling water and leave to drain. 
  • 30ml/2 tbsp olive oil  
  • 1 lemon juiced 
  • ½ onion, finely sliced 
  • 2 chicken breasts skinned boned and cut into fine strips 
  • 85g/3½oz watercress washed, trimmed and finely chopped (reserve a few sprigs to garnish) 
  • 125g/4½ oz medium fat soft cheese with chives 
  • 110g/4oz natural yogurt low fat 
  • 150ml/¼ pint of chicken stock or water 
  • 1 pinch salt 
  • 1 pinch ground black pepper
Method
  1. Stir-fry the sliced onion in the olive oil and lemon juice for 5 minutes.
  2. Add the strips of chicken and cook for a further 5 minutes.
  3. Stir in the watercress and cook for 1-2 minutes before adding the remaining ingredients except the pasta. Season to taste with salt and ground pepper.
  4. Bring to a gentle simmer, stir in the cooked pasta, heat through and serve immediately garnished with sprigs of watercress.
