Pancake Cannelloni

pancakeTeff  pancakes are a revelation.  Here they make a delicious sophisticated dish - great for entertaining.

Makes: 3 pancakes per person
Preparation time: 15 minutes
Cooking time: 20-25 minutes
Ingredients
  • Teff flour mix pack
  • pine nuts
  • spinach
  • ricotta cheese
  • 2 tsps grated nutmeg
  • onions finely chopped
  • garlic
  • 1 tsp olive oil
  • tin chopped tomatoes
  • 1 tbsp balsamic vinegar
  • 2 tsps sugar
Method
  1. Roast a handful of pine nuts by heating them in a dry frying pan until brown.
  2. Cook the spinach in a large pan in a small amount of water.  Drain well.
  3. Mix together the pine nuts and the spinach.  Add ricotta cheese (or goats cheese if dairy free) and grated nutmeg. Season.
  4. Fill each pancake with the spinach mixture and roll up. Placec each pancake in a well oiled baking dish.
  5. To make the tomato sauce, fry the onions and garlic in the olive oil.  When soft add chopped tomatoes, balsamic vinegar, sugar and season.  Allow to simmer until reduced slightly and thickened.
  6. Pour sauce over pancakes and top with grated cheeses if desired.
  7. Bake in the oven for 20-25 minutes at 180°C/350°F/;Gas Mark 4.
